Turmeric Calming Soup

Ingredients

  • 1 tablespoon of extra virgin olive oil or avocado oil

  • 1 onion – chopped

  • 2 cloves of minced garlic

  • 1 large potato – chopped

  • 6 cups of cauliflower – chopped

  • 4 cups of vegetable broth

  • 1 cup of oat milk

  • 1 tablespoon of ground turmeric

  • ½ tablespoon of chopped kimchi (optional)

  • Salt/pepper to taste


Directions

Heat oil in large pot for 3 minutes. Add onion, garlic, potatoe, cauliflower, turmeric and kimchi (if using).  Cook for 10 minutes, stirring occasionally.

Add the broth, oat milk, salt and pepper and simmer until vegetables are soft – about 10- 15 minutes.

Transfer soup to a blender and blend to a creamy consistency.

Return soup – if required, add salt and pepper.
