Turmeric Calming Soup
Ingredients
1 tablespoon of extra virgin olive oil or avocado oil
1 onion – chopped
2 cloves of minced garlic
1 large potato – chopped
6 cups of cauliflower – chopped
4 cups of vegetable broth
1 cup of oat milk
1 tablespoon of ground turmeric
½ tablespoon of chopped kimchi (optional)
Salt/pepper to taste
Directions
Heat oil in large pot for 3 minutes. Add onion, garlic, potatoe, cauliflower, turmeric and kimchi (if using). Cook for 10 minutes, stirring occasionally.
Add the broth, oat milk, salt and pepper and simmer until vegetables are soft – about 10- 15 minutes.
Transfer soup to a blender and blend to a creamy consistency.
Return soup – if required, add salt and pepper.
